• Broad knowledge of fish
• Ability to communicate in English
• Ingredient knowledge & recipe specifications
• Food Safety compliance & training
• Good knowledge of different sushi recipes
• Business minded and customer oriented
• Express and implied ethical responsibilities
• Relevant systems knowledge
• Understanding of production cards, production plan and SOPs
• Sushi Onboarding programme experience
