Job Description
Reports to: Chef de Partie, Senior Chef de Partie and Head Chef
Direct Reports: Commis Chefs, Kitchen Porters
Responsibilities
- To help manage the general day to day running of their section within the kitchen
- To prepare pizza dough, bases and toppings in line with company recipes and specifications, including mixing, portioning, proofing, stretching and ingredient preparation, ensuring consistency in quality, size, presentation and portion control
- To operate and manage the pizza oven, ensuring pizzas are cooked consistently to the required standard
- To help manage cost and quality control for both incoming and outgoing goods
- To ensure that goods are stored in the correct conditions and that stock rotation is carried out correctly
